Analysis Of Heat Energy In The Dying Process Of Sweet Potato (Ipomoea Batatas L.) Using A Rack Type Dyer (Tray Dryer)

Drying is a method to remove or reduce water from a material by evaporating the water using heat energy. Drying sweet potato leaves is a solution to reduce water content with SNI standards (BSN-SNI No.1.3836.2013) regarding the water content in herbal tea of a maximum of 8%. Sweet potato leaves can be processed into herbal tea and are useful as medicines. The purpose of this study was to analyze the energy balance and calculate the drying efficiency in the drying process of sweet potato leaves using a tray dryer. The method used was experimental and the data generated from this study were analyzed using regression analysis and displayed in the form of graphs and tables. The parameters analyzed in this study were temperature, relative humidity, water content and energy balance. The results of the tool test showed that the amount of incoming heat energy at a temperature treatment of 40-45 ° C was 803.82 kJ, useful heat energy was 168 kJ, outgoing heat energy was 157.655 kJ, and lost heat energy was 325.655 kJ. While the amount of heat energy entering the temperature treatment of 50-55°C is 1,148.57 kJ, useful heat energy is 165.2 kJ, outgoing heat energy is 193.625 kJ, lost heat energy is 356.025 kJ. The total efficiency of the drying system during the drying process with a temperature treatment of 40-45°C is 73% and in the treatment of 50-55°C is 49%.
